Vinification and certificates

Quality vinification

Rigorous management of the land, treatment control and recommendations, attention to incidents in the field, pest control, ripeness tests… At Domenio we attend to the needs of all members of the cooperative in order to guarantee the quality processes required by the official ruling bodies.

In our installations there is a whole Technical Department that watches over and ensures that, when they arrive at the wineries and oil mills, the crops have the right qualities to be made into wines, cavas and oils with their own character. This process is repeated when the products are despatched after processing and bottling, thus achieving certificates under 5 of the main Designations of Origin in Catalunya.

As producers in the food and agriculture industry, we care deeply about the quality of the products we make and about customer attention. Our various premises include different areas specially designed for the preparation of wine, cava and oil, all of which have been monitored with the technical instruments necessary throughout every stage of their production process: from the land to the bottling.

How our wines are made

From selected grapes of the best varieties – black and white – come the Domenio products, with their own personality: elegant and intense reds, light and smooth whites and aromatic, clean rosés. These wines are produced by different processes, depending on the characteristics of each grape variety and the specifications of the Technical Department which supervises each of them to achieve the optimum wine production for each grape variety.

How our cava are made

White wine is the basis for making cava at Domenio. It is the result of combining three of the best grape varieties grown by Cellers Domenys (Charelo, Macabeo and Parellada) and always uses the traditional method (with second fermentation in bottle).

A real exception here is that the grape variety native to Conca de Barberà, the Trepat, is used to make rosé cava.

How our oil are made

The oils produced by Domenio Wines, in the DOP Siurana area, are made with 100% Arbequina olives. Prepared using a traditional production process, cold pressed, they are remarkable for their fine flavours and sensory properties.

The members of Cellers Domenys bring their crops to the mill immediately after harvesting from the trees. The production is transported to the premises of CEOLPE in Llorenç del Penedès or to the mill in La Bisbal del Penedès.
